Rice in Action (legal entity Selección Mediterránea Fine Foods S.L.) is a Madrid-based foodtech startup that has developed a patented rice-processing technology it calls "flavor encapsulation", injecting broths, fats, proteins, fibres and micronutrients directly into the grain so the rice cooks in under 5 minutes without added liquid and with a lowered glycaemic index. It sells B2B to foodservice, brands and retailers under the Maestro, La Santa, Endurance and Risottos & Cremosos lines, and also licenses the technology industrially. Founded in 2021, it won the top prize at the 2022 World Food Innovation Awards, was picked by EIT Food among Europe's 50 highest-potential food startups, and has raised roughly €1.3M across a €437,500 Startupxplore crowdfunding round and a later €870,000 round.
